Pisces & Pesto Shepherd’s Pie – By Anthony Davies

The Flavour for this month is a quick and easy one pan meal that can utilise our less prestigious captures, turning that tricky snapper, trevally or tuna into something tasty. If you’re into Star Signs you’ll know that the symbol for Pisces is two fish. This dish is more interesting if you use a couple of different types of fish flesh, hence the title. Quantities given serve four adults.

Ingredients:

800g skinned , boneless fish fillets, cut into palm sized pieces. Two different textures, say bream and trevally; or two different colours, like tuna and snapper, will make things more interesting. This time I used tricky snapper and some marked-down supermarket sea trout.

one small jar (175-200g) basil pesto

400g mash. I used Cauliflower ‘cos it’s Keto, but sweet potato or potato would work as well or better

Handful of spinach leaves

Grated cheese for topping, salt and pepper to taste

Spread the pesto over the fish pieces.

Method:

Preheat the oven to 180c

Spoon the pesto over the fish, use your fingers to make sure all is covered. Arrange in a single layer in a large casserole and sprinkle with a little grated cheese.

Arrange the spinach leaves over the fish, then carefully spoon over the mash, spreading evenly to a depth of at least 1cm.

Sprinkle with a little grated cheese and bake for approximately 25 minutes, until the cheesy mash top is golden and the fish is cooked through. Add salt and pepper to taste.

Serve with salad or stir-fried veggies, side pictured here is a “Maltese lunch” of fried mushroom, bacon, tomato and capsicum spiced with garlic, capers and olives.
